Ingredients

1. Mutton keema 250 gm

2. Sliced onion 1 medium sized

3. Raw papaya paste 1 tablespoon / fresh cream 2 tablespoon

4. Ginger garlic paste 1 tablespoon

5. Red chilli powder 1 teaspoon

6. Corriander powder 1 teaspoon

7. Garam masala powder 1 teaspoon

8. Mixed herbs 1 teaspoon

9. Garam masala whole spieces ( cinamom, cardamom, nutmeg, mace, white cumin, bayleaf, red chilli whole)

10. Rose water 1 teaspoon

11. Keora water 1 teaspoon

12. Saffron strands 4/5

13. Salt

14. Refined oil

15. Ghee

16. Roasted gram flour 1 tablespoon


Green chutney

Ingredients

1. Corriander leaves

2. Green chillies 2

3. Garlic 4 cloves

4. Lemon juice 2 teaspoon


Process

Make a fine powder of all the whole spieces including bayleaf and red chillies

Fry the onion slices till they are brown, make a paste of fried brown onion

Make a paste of cashew

Make a mince of mutton keema, add fresh cream or papaya paste , in this add spices powder (2teaspoon), red chilli powder, corriander powder, garam masala powder, , paste of fried onions, ginger garlic paste ( without water), cashew paste, Rosewater, keora water, saffron, 1 tablespoon oil, gram flour. Mix everything well and marinate it in refrigerator for 3-4 hours at least. 

Bring it to room temperature, add salt and mix everything well. Make small pieces of kababs from the 

In a pan add ghee ( 2 tablespoon) and heat it. Once it is hot fry the kababs till they are brown.



How to make green chutney

In a mixer add corriander leaves, green chillies, lemon juice, garlic cloves, salt



Serve the kababs with green chutney
