Prawn Polao

Ingredients 1. 250 gm prawn marinated with salt and turmeric powder 2. Basmati rice 50 gm 3. Onion slice 1 4. Spring onions 3 5. Green chillies 3 6. Corriander leaves 7. Ginger garlic paste 8. Tomato paste 9. Garam masala powder 10. Pepper 11. Mustard oil 1 tbsp 12. Ghee 1 tea spoon 13. Rose water 1 tbsp 14. Saffron soaked in milk 15. Turmeric powder 1 teaspoon 16. Red chilli powder 1/4 tea spoon Procedure Soak rice for half an hour Drain excess water Add ghee and garam masala powder Add Mustard oil Add onion, spring onions stir them Add ginger garlic paste,Tomato paste Add green chillies Add pepper,Turmeric powder and red chilli powder, salt Add prawns Add soaked rice Add boiled water ( ratio of water to rice is 2:1) Add rose water, saffron ( soaked in milk) Salt to taste ( remember the water will dry up hence consider amount of salt) Cover the pan and let the rice cook for 5 minutes Add corriander leaves and spring onions to garnish

Dalia

Ingredients 1. Dalia 1 cup 2. Moong dal 1cup 3. Ginger paste 2 tbsp 4. One tomato paste 5. 4 green chilly paste 6. Asfoetida 7. Vegetables ( capcicum, cauliflower, babycorn....any other available vegetable) 8. Mustard oil 9. Cumin seeds whole 10. Salt and haldi Procedure Fry moong dal in  pan Soak Dalia in water Boil cauliflower Heat oil in a pan Fry the vegetables in a pan Add cumin seeds and asfoetida to oil Add ginger paste, tomato paste and green chilli paste Add Dalia and fried moong dal Mix them well Add 8 cups of water Add salt, haldi and cover the pan After 10 mins open the lid and check if the water evaporated Serve it hot Garnish with coriander leaves (optional not in picture)

Egg chicken sandwich

On a quarntine day.... I had egg chicken sandwich It is pretty easy to prepare Ingredients 1. Sandwich breads 2. Boiled potatoes 2 3. Boneless chicken marinated overnight in fresh cream and ginger garlic paste 4. Boiled egg-1 5. Salt 6. Pepper 7. 1 cube butter melted 8. Onion slice and green chillies for garnishing 9. Tomato sauce Procedure Smash potatoes Grind chicken and eggs Add salt, pepper with smashed potatoes Saute in a pan Add melted butter, salt , pepper if required Add mixture to bread slices Put the bread slices in sandwich maker Serve hot with sliced onion, green chillies and sauce

Sugar free rawa

Being quarantine, we donot have any option to go out for evening snacks..... I preferred to prepare this sweet dish , but thought of making bit sugar free for diabetic patients.... Ingredients 1.1 cup of rawa 2. 1 cup of powdered milk 3. 3 cups of water 4. 4 tablespoons of ghee  5. Dry fruits ( almond, cashew, kismis, raisins ) 50 gm 6. Garam masala whole ( grinded) Recepie Heat pan Add 2 table spoons of ghee Add dry fruits, fry them in low flame for 1/2 minutes Take out the fried dry fruits Add 2 more table spoons of ghee Add rawa and fry it in low flame for 2 mins Add 1 cup water to one cup of powder milk and mix well Add the milk to pan Add remaining 2 cups of water Stir them well Cover the pan and cook for 5 minutes till the mixture gets thickened Add dry fruits, garam masala powder and serve in a serving bowl

Continental lunch in my style

On a janata curfew day , I decided to cook something different with a limited resource It's my first attempt..... Ingredients 1. 2 eggs 2. 8 pieces of boneless chicken overnight  marinatedin fresh cream garlic paste and salt 3. Barbecue sauce 2 table spoon ( In absence of barbecue sauce try with 1 teaspoon of soya sauce, 1 teaspoon of red chilli sauce 2 teaspoon of tomato sauce) 4. Cauliflower and babycorn boiled 5. Boiled potato - 2, tomato -2( boiled) and few chopped coriander leaves washed properly 6. 3 cubes of butter 7. Rice for 2 people 8. Apple Process Smash boiled potato, add salt and 1 cube of melted butter and mix them well 4 pieces of marinated chicken dipped in barbecue sauce for half an hour Grill the marinated chicken in preheated oven at 150 degree for 5 mins each side Brush remaining 4 pieces of marinated chicken with melted butter and grill them at 150 degree for 5 mins each side Grill tomato in oven at high flame for 2-3 mins each side Prepare ...

Butter dal fry tadka

Ingredients 1. 200 gm tadka dal 2. 2 tea spoon of ghee 3. 1 tea spoon of butter 4. 1 table spoon of mustard oil 5. One onion nicely chopped 6. Ginger paste 1 table spoon 7. 1/2 garlic nicely chopped 8. Cumin seeds 2 tea spoon 9. Asafoetida 2 tea spoon 10 . Salt to taste 11. Red chillies 5/6 12. Chilli powder 1/2 tea spoon 13. Haldi powder 1 tea spoon 14. Garam masala whole 15. Corriander leaf ( optional) 16. Garam masala powder Recepie Boil tadka daal with 2 red chillies Salt haldi pwder Add 1 tea spoon of ghee in a pan Fry onion and garlic till they become light brownish Again add ghee 1 teaspoon and 1table spoon of oil add 1 teaspoon of Asafoetida, 1 teaspoon of cumin seeds, 2/3 red chillies Stir little bit, add ginger paste Add boiled tadka dal Onion garlic fry Red chilli powder Add water Cover it and cook for some time In seperate pan add 1 table spoon of oil Add Asafoetida, cumin, red chillies and stir them Add them to dal, then add butter ...

Pepper chicken...... Indo western style

Chicken is all time favourite....easy to cook good to taste dish..... I have tried some indo western style of preparing pepper chicken..... Let's see how my recepie goes ... Please taste and share your views Ingredients 1. Boneless chicken 700gm 2. Garlic paste 1 whole 3. Little ginger paste 4. Fresh cream 5. Pepper 6. Salt 7. Cashew and Charmagaj ( watermelon seeds ) paste 8. White Oil 9. Vinegar Recepie Add 1 teaspoon of vinegar and marinate chicken for 45 mins Drain off extra vinegar Add fresh cream ginger garlic paste to chicken Add enough of fresh cream to make chicken softer Dip chicken inside fresh cream Marinate overnight Keep in room temperature for half an hour add salt pepper Add oil in pan, fry chicken till they are light brownish Add marinated gravy Cashew Charmagaj paste Boiled water Salt and pepper as per taste Serve it to the serving bowl Ps... You can have it with nun, kulcha, roti....

Scrambled eggs

Scrambled eggs is a most common breakfast item and it is easy to cook within few minutes...... Let's see how to prepare a fluffy scrumbled egg breakfast Ingredients 1. 4 eggs 2. Milk 3. Butter 4. Cheese 5. Salt 6. Pepper Procedure Break 4 eggs in a container Add milk ( at room temperature) Little bit of cheese ( optional) Salt and pepper to taste Mix them well In a fry pan, add some butter Pour the mixture Keep the flame low Once the ends are getting cooked, use spatula to make the liquid flow to the middle Once the middle portion becomes thickened, scrumble them properly Remember to keep the flame low otherwise there will be chances of eggs getting brownish Turn off the flame and serve in a bowl.

Kucho chingri r bora

Ingredients 1. Prawn  ( kucho chingri) -300gm 2. Ginger garlic paste 3. Onion slices 4. Green chillies 5. Egg -1 6. Baking powder 7. Cornflower 8. Bread crumbs 9. Refined oil 10. Maida 11. Salt Process Boil some water, add prawns to the boiling water and keep it for some time then strain the excess water Make a thick paste of prawn with ginger garlic green chilly add sliced onion baking powder and salt to it.  Roast the mixture in a dry pan. Make small balls  Make a batter of egg maida salt and cornflower Dip balls into batter and then breadcrumbs Heat refined oil and fry the boils. Serve with Schezwan chutney and slice onions, green chillies ( not in this picture)
