Egg Souffle

 Egg Souffle Ingridients 1. 2 eggs 2. Butter 1/4 teaspoon 3. Cheese cube -1 4. Salt as per taste 5. Pepper 1 tea spoon 6. Milk 1/2 cup room temperature  7. Whip cream powder 2 tablespoon 8. Mixed herbs 9. Baking powder 1 teaspoon 10. Baking cups Process Mix milk with whip cream powder. Use electric grinder to mix smoothly till foam appears Seperate egg yolk and egg white, use electric grinder to mix the egg white with salt, pepper properly In cup brush butter thoroughly add egg white, followed by cream, then add egg yolk, add mixed herbs Preheat oven at 200 degrees for 5 minutes Add the cups and bake for 15 mins at 150 degrees

  Name of the Recipe : Tricolour Chicken Cook Your Food Story This year we have celebrated 75th year of Independence on 15 th August 2021.The National Flag of India( tiranga) was also adopted in the same year - 22july 1947 inspired from Swaraj flag. When we were celebrating  75th Independence day all around, I thought ' why not cook something which we love and presrnt in a tiranga form'.  মুর্গ মালাই টিক্কা উপকরণ চিকেন  100গ্রাম ডিম 2 টো  আলু দেদ্ধ 1 টা আদা 1/2 ইঞ্চি টুকরো রসুন 5/6 টা কুঁচনো মাখন 1চাচামচ  ধনেপাতা কুচি 1 টেবিল চামচ পুঁদিনা কুচি 1 টেবিল চামচ গোল মরিচ  1.5 চা চামচ লংকার গুঁড়ো 1 /2 চা চামচ কাঁচা লঙ্কা 1 টা নুন স্বাদমত  সাদা তেল 3 টেবিল চামচ টক দই 3 টেবিল চামচ মেয়নিস 1 টেবিল চামচ পেঁয়াজ কুচি -1 টা চ্যাট মসলা 1 চা চামচ তন্দুরি মসলা 1 চা chamoch কেচাপ 1 টেবিল চামচ  পদ্ধতি  আলু সেদ্ধ করে নিতে হবে, 1 টা ডিম সেদ্ধ করে নিতে হবে  চিকেন সেদ্ধ করে কুচি করে নিতে হবে, ডিম, চিকেন, আলু একসাথে মেখে নিয়ে তার মধ্যে পেঁয়াজ কুচি, আদা কুচি, কাঁচা লংকা কুচি, 1 চা চামচ গোল মরিচ, লংকার গুঁড়ো, চ্যাট মসলা, তান্দুরি মসলা,ধোনে পাতা, পুঁদিনা পাতা দিতে হবে প্যান এ মাখন গরম করে তাতে রসুন কুচি  দিয়ে অল্প সাতলে নিতে হবে, তারপর সেটা চিকেন র মিক্সচার এ দিয়ে দিতে হবে, 2 টেবিল চামচ টক দই মিশ্রণ টি ভালো করে মেখে নিয়ে 3/4 ঘন্টা মারিনাট করতে হবে মিশ্রণ টা রুম টেম্পারেচার এ এনে তাতে নুন দিয়ে আরো একবার মেখে নিতে হবে 1টা ডিম ভেঙে তাতে নুন দিয়ে বীট...

চিকেন ফুটবল

 চিকেন ফুটবল  উপকরণ বোনলেস চিকেন 200গ্রাম আদা 1 ইঞ্চি রসুন 7/8 টা কোয়া সোয়া সস 1 টেবিল চামচ ভিনিগার 1 টেবিল চামচ চীজ গ্রেটেড 2 টেবিল চামচ পাউরুটি 2 টো স্লাইসড চীজ  1 টা ছোট টুকরো টমেটো সস 1 টেবিল চামচ ধনেপাতা কুচি  2 টেবিল চামচ কাঁচা লংকা 2 টো সাদা তেল মিক্সড হর্বস 1 চা চামচ গোল মরিচ 1 চা চামচ নুন 1/2 চাচামচ মেয়নিস 1 টেবিল চামচ  প্রদ্ধতি চিকেন ভিনিগার এ 30 মিনিট ভিজিয়ে রাখতে হবে মিক্সি তে চিকেন, আদা, রসুন, দিধনেপাতা, সয়াসস, গ্রেটেড চীজ, গোল মরিচ, নুন একসাথে পেস্ট করে নিতে হবে এই পেস্ট টা 1 ঘন্টা   মরিনাট করতে হবে পাউরুটি গুলি সাইড কেটে ছোট ছোট টুকরো করতে হবে চীজ টা ছোট ছোট  টুকরো করে নিতে হবে হাতে তেল মেখে  চিকেন টা ছোট ছোট  কেটে নিতে হবে প্রতিটা অংশের মধ্যে একটা করে চীজ স্লাইস র অংশ দিয়ে গোল আঁকার এ গড়তে হবে গোল বল গুলোর চারিদিকে পাউরুটি টুকরো দিয়ে সাজিয়ে দিতে হবে এরপর এই বল গুলো তেল এ ভেজে নিতে হবে একটা বাটিতে মেয়নিস, টমেটো সস মিশিয়ে একটা ডিপ সস তৈরী করে নিতে হবে চিকেন ফুটবল গুলো ডিপ সস র সাথে পরিবেশন করতে হবে

 চিকেন মহারানী উপকরণ চিকেন 300 গ্রাম টক দই 2 টেবিল চামচ ভিনিগার 1টেবিল চামচ আদা রসুন বাটা 1 টেবিল চামচ নুন স্বাদমত কসউরি মেথি 2 চা  চামচ গোলমরিচ 1 চা চামচ সাদা তেল 2 টেবিল চামচ পেঁয়াজ 3 কাঁচা লংকা 3 আদা  1 ইঞ্চি রসুন 5/6 কোয়া জিরে 1 চা চামচ ধোনে 1 চা চামচ মৌরি 1 চা chamoch ভেজানো আলমন্ড 10 টা কাজু 10 ta চরমগজ  1 চা চামচ উষ্ণ দুধ 1/2 কাপ চিনি 1 চা  চামচ  পদ্ধতি চিকেন ভালো করে ধুয়ে ভিনিগার এ ভিজিয়ে রাখতে হবে  30 মিনিট এরপর অতিরিক্ত ভিনিগার ফেলে দিয়ে, টক দই, আদা রসুন বাটা, গোলমরিচ, কসউরি মেথি 1 চামচ মাখিয়ে চিকেন টা 3 ঘন্টা  মরিনেট করতে হবে 1 টা পেঁয়াজ টা 5মিনিট জলে সেদ্ধ করে  নিয়ে তার সাথে কাঁচা লংকা, আদা, রসুন দিয়ে একটা পেস্ট বানিয়ে নিতে হবে বাকি দুটো পেঁয়াজ কুচি করে নিতে হবে  তেল গরম করে তার মধ্যে  পেঁয়াজ কুচি দিয়ে দিতে হবে, পেঁয়াজ নরম হয়ে এলে তার মধ্যে  আদা রসুন পেঁয়াজ কাচালংকা র পেস্ট টা দিয়ে দিতে হবে, ভালো করে কষিয়ে নিতে হবে মসলা টা, এরপর মরিনেট করে রাখা মাংস টা দিয়েটার উপর মরিনেটমসলা, নুন, টা দিয়ে দেবো ভালো করে কষিয়ে নিয়ে চা...

 চিকেন পাকোড়া উপকরণ  1. বোনলেস চিকেন 200গ্রাম 2. ভিনিগার 1 টেবিল চামচ 3. আদা রসুন বাটা 2 টেবিল চামচ 4. কাঁচা লংকা বাটা 2 টো 5. ধোনে পাতা কুচি 2 টেবিল চামচ 9. সোয়া সস 1 টেবিল চামচ 10. কর্নফ্লাওয়ার 2 টেবিল চামচ 11. ময়দা 2 টেবিল চামচ 12. সাদা তেল 1/2 কাপ 13. গোলমরিচ 1 চা চামচ 14. নুন স্বাদ মতো 15. ডিম 1 টা  প্রদ্ধতি চিকেন ভিনিগার এ চিকেন মরিনাট করে রাখতে হবে 30 মিনিট. মরিনাটেড চিকেন র মধ্যে আদা রসুন বাটা, কাচালংকা বাটা, সোয়া সস, গোলমরিচ,1 টেবিল চামচ কর্নফ্লাওয়ার দিয়ে 3/4 ঘন্টা মারিনাট করতে হবে মারিনাট চিকেন রুম টেম্পারেচার এ এনে তার মধ্যে ধোনে পাতা কুচি, নুন যোগ করতে হবে ডিম টা ফেটিয়ে তার মধ্যে নুন ও গোলমরিচ দিয়ে মিশিয়ে নিতে হবে. করাই তে তেল গরম করতে হবে  একটি প্লেট এ ময়দা , কর্নফ্লাওয়ার মিশিয়ে নিতে হবে  চিকেন ডিম এ চুবিয়ে, ময়দা, কর্নফ্লাওয়ার র মিশ্রনে মাখিয়ে গরম তেল এ ভেজে নিতে হবে

চীজ ভেজ ওটস চিল্লা

 চীজ ভেজ ওটস চিল্লা উপকরণ 1. ওটস 1কাপ 2. স্লাইস চীজ  1 টা 3. চীজ কিউব 1টা 4. বিন্স(5/6 টা ),গাজর (1 ta), ক্যাপসিকাম( 1/2), পেঁয়াজ (1টা ), টমেটো  1 টা ছোট ছোট টুকরো করে নিতে হবে 5. নুন স্বাদ মতো 6. গোল মরিচ  1 চা চামচ 7. সাদা তেল 1 টেবিল চামচ 8. দই 2 টেবিল chamoch প্রদ্ধতি ওটস র মধ্যে দই এবং সব সবজি দিয়ে ভালো করে  মেখে নিতে হবে, তারপর ওর মধ্যে জল 1/3 কাপ দিয়ে ব্যাটের টা বানিয়ে তাতে নুন, গোলমরিচমিশিয়ে দিতে হবে চাটু গরম করে  তেল ব্রাশ করে ওটস মিশ্রণ টা দিয়ে ছড়িয়ে দিতে হবে, কিছুক্ষন পর উল্টে দিয়ে, মাঝে স্লাইস চীজ, র চীজ কিউব দিতে হবে চীজ মেল্ট হয়ে গেলে একটা সাইড ফোল্ড করে নামিয়ে নিতে হবে

  পুঁদিনা মালাই চিকেন কাবাব উপকরণ 1. পুঁদিনা পাতা,1 আটি 2. ধনেপাতা 1 আটি 3. ফ্রেস ক্রিম 2 টেবিল চামচ 4. টক দই 2 টেবিল চামচ 5. মেয়নিস 2 টেবিল চামচ 6. আদা রসুন বাটা 2 টেবিল চামচ 7. বোনলেস চিকেন 200 গম 8. কাচালংকা 2 টো 9. গোল মরিচ 1 চা  চামচ 10. মিক্সড হর্বস  1 চা  চামচ 11. ভিনিগার 1 টেবিল চামচ 12. নুন আন্দাজ মতো 13. সাদা তেল 1 চা  চামচ 14. লেবু 1 টা 15. টমেটো, পেঁয়াজ 1 ta করে পদ্ধতি চিকেন টা প্রথমে ভিনিগার এ ভিজিয়ে রাখতে হবে  15 মিনিট একটা পাত্রে 1 টেবিল চামচ টক দই, 1 টেবিল চামচ ফ্রেস ক্রিম, 1 টেবিল চামচ  মেয়নিস,গোল মরিচ  মিশিয়ে নিতে হবে মিক্সি তে কিছুটা কুঁচনো  ধনেপাতা, পুঁদিনা পাতা, কাঁচা লঙ্কা, লেবুর রস,দিয়ে একটা মিশ্রণ বানিয়ে নিতে হবে প্রথম মিশ্রনের সাথে  দ্বিতীয় টা মিশিয়ে  নিয়ে তার মধ্যে চিকেন ভালো করে  মাখিয়ে নিতে হবে, টমেটো, পেঁয়াজ গোল গোল করে  কেটে এতে মিশিয়ে  নিতে হবে এবার এটা ফ্রিজ এ  3/4 ঘন্টা মেরিনেট করতে হবে ফ্রিজ থেকে বের করে  রুম টেম্পারেচার এ এলে তাতে নুন দিতে হবে মাই...

 Mutton keema kochuri Ingredients 1. Keema 100gms 2. Onion sliced 1 3. Ginger garlic paste 1.5 tablespoon 4. Hunk Curd 2 tablespoon 5. Corriander leaves 6. Salt 7. Cumin powder 1 teaspoon 8. Garam masala powder 9. Oil 1 tablespoon for keema 10. Flour 1.5 cups. 11. Refined oil  for frying 12. Dalda 1 tablespoon 13. Luke warm water 14. Red chilli powder 1 teaspoon 15.  Dry Schezwan fish Ingredients 1. Vetki fish cut into small cubes 7/8 2. Vinegar 2 teaspoon 3. Ginger garlic green chilli (1), corriander leaf paste 2 tablespoon 4. Pepper 1 teaspoon 5. Schezwan chutney 1 tablespoon 6. Tomato sauce 1 tablespoon 7. Soya sauce 1 teaspoon 8. Olive oil 2 teaspoon 9. Mixed herbs 1 teaspoon 10 cornflour 2 tablespoon Process Add vinegar in fish and marinate it for 30 mins Add ginger garlic green chilli corriander paste, Soya sauce, Schezwan chutney, tomato sauce and marinate for 4-5 hours in refrigerator After 5 hours Bring it to room temperature, add little salt if required since sauces already have salt in it In pan heat oil, add the fish saute both ends, add the sauce, mix cornflower with water and slowly add it to the mixture, so that no lumps is formed, allow the excess water to disappear,  Add mixed herbs and serve

Pepper 1 teaspoon Process Mix all veggies and chicken and Salt, pepper mixed herbs, break 1 egg, mix everything well, add baking powder, baking soda, stir it properly  Add the mixture in 3 muffin cups,add cheese, Break another egg and add on top of every cup, mix it with the veggies Preheat oven at 180 degrees for 5 mins Bake the mixture at 180 degree for 20 mins. Serve it hot

 Mutton keema momo Ingredients 1. Mutton keema 100gm 2. Curd 4 tablespoons 3. Ginger garlic paste 2 tablespoon 4. Sliced onion 1 5. Red chilli powder 1 teaspoon 6. Corriander powder 1/2 teaspoon 7. Cumin powder 1/2 teaspoon 8. Oil 1 tablespoon 9. Flour 1.5 cup 10. Mixed herbs 1 teaspoon 11. Salt as per taste Process Marinate mutton keema with 2 tablespoon of curd, ginger garlic paste, red chilli powder, corriander powder, cumin powder for 2 hours. Heat a pan, add oil, fry the onions, add marinated keema, fry it till the raw smell goes away, add salt, add mixed herbs.turn off the flame, allow the mixture to cool Make a tight doe using flour salt, curd ( 2 tablespoon) . Make a large paratha using rolling pin , cut it into small round pieces , add the mixture in the centre and fold either sides  Add the momos in momo maker allow it to steam for 20 mins, serve with tomato sauce or Schezwan chutney

 Dahi paneer 1. Hunk Curd 400gm 2. Paneer 500 gm 3. Ginger garlic paste 2 tablespoon 4. 4 Green chilli, corriander leaf paste 2 tablespoon 5. Kashmiri mirch powder 2 tablespoon 6. Garam masala powder 1 teaspoon 7. Schezwan sauce 1 teaspoon 6. Salt as per taste 7. Sugar 1 teaspoon 8. Roasted gram flour 2 tablespoon 9. Slitted green chillies for garnishing 4 10. Onion  Process In a bowl add curd, in curd add Kashmiri mirch powder, red chilli powder, garam masala powder,stir it till it gains colour. In a bowl add roasted gram flour add water and make it a  paste, add gram flour paste in curd, add salt sugar, stir it continuously so that no lump is formed, add paneer pieces,onion pieces mix it thoroughly, marinate it overnight Heat a pan , add the marinated mixture, stir it  Let the gravy dries up Add Schezwan chutney, mix it thoroughly, serve it when the gravy is dried up. Garnish with slitted green chillies

Dry fruits - cashew , almonds, resins, walnuts chopped Process Peel off the mangoes, using knife remove the outer skin of mangoes, cut the mangoes into small pieces, in a mixer add mangoes, 2 tablespoon of water and blend them, add sugar, milk to the blender jar and make a thick paste. Pour it into glasses , add chopped dry fruits and serve

 Cheese onion butter uthapam Ingredients 1. Rice 1 cup 2. Urad dal 1/4 cup 3. Poha 1/2 cup 4. Grated cheese 1/2 cup 5. Butter 1 cube 6. Sliced Onion 2 medium sized Process Soak rice and dal overnight, make a thick paste of rice and dal. Soak poha , Rinse poha , make a paste, add it in mixture of rice and dal, ferment for 8 hours at least. Add salt to mixture ( remember that you are adding butter and cheese so adjust salt accordingly) Heat a pan, add butter, allow it to melt, add the mixture, spread it on pan, add sliced onion, add grated cheese, flip it to other side, once both sides are cooked properly, serve it with white chutney

Mixed herbs 1 teaspoon Process In a bowl add grinded oats, milk and mix it, add chopped vegetables In a separate bowl beat an egg with salt, pepper Add it to oats mixture, mix everything well, add red chilli powder and mixed herbs Add refined oil in pan, add the mixture, spread it on the pan, once one side is done flip to other side, fry properly and serve

 Chicken Sawarma creppe Ingredients  1. Chicken boneless 200 gm 2. Ginger garlic paste 2 tablespoon 3. Fresh cream 2 tablespoon 4. Mayonese 2 tablespoon 5. Almond Oil 1 tablespoon 6. Butter 1 cube 7. Milk 1 /2 cup 8. Eggs -1 9. Flour 1 cup 10. Baking powder 1 teaspoon 11. Baking soda 1/4 teaspoon 12. Onion slices 13. Vinegar 2 teaspoon 14. Lettuce/ cabbage  leaves 1 sliced 15. Mixed herbs 1 tablespoon 16. Grated cheese 1/2 cup 17. Salt 18.  Mutton keema patis Ingredients 1. Mutton keema 100gm 2. Ginger galic paste 1 tablespoon 3. Finely chopped onion- 1 4. Turmeric powder 1 teaspoon 5. Red chilli powder 1 teaspoon 6. Garam masala powder 1 teaspoon 7. Salt 8. Refined oil 2 tablespoon 9. Corriander powder 1 teaspoon 10. Corriander leaves (optional) 11. Patis sheet 12. Hunk curd 2 tablespoon Process Marinate mutton keema With curd, ginger garlic paste, red chilli powder, turmeric powder for 2 hours  Heat a pan add oil 1 tablespoon, chopped onion, add marinated keema, add corriander powder,add salt, cook it for sometime, add 1/4 cup lukewarm water if required, cook until water is dried off, add  garam masala powder, chopped coriander leaves. Take in different vessel and allow it to cool. Take a patis sheet, pour some keema mixture inside it, fold it from one side, tie the ends with water. Make other patis in same process.  Chicken cheese kabab with mayo dip sauce Ingredients 1. Chicken keema 100 gm 2. Cheese cube 1 3. Ginger garlic Green chilli paste 1 table spoon 4. Mixed herbs 1 teaspoon 5. Pepper 1 teaspoon 6.  Puran poli Ingredients 1. Flour 1.5 cups 2. Chana dal 100 gm 3. Jaggery liquid 1/2 cup 4. Cardamom powder 1 teaspoon 5. Ghee 4 tablespoon 6. Sugar 1 tablespoon Process Soak chana dal overnight , boil it in pressure cooker, cook it and then grind it to make a thick paste Add 1 tablespoon ghee to flour and mix it, add sugar, followed by lukewarm water and make a soft doe, grease doe with ghee or refined oil In a non stick pan add 1 tablespoon ghee, add chana dal paste, add Jaggery stir it continuously,make a thick paste, turn off heat add cardamom powder and mix it . Pour mixture in a bowl and cool it Make balls from the flour doe.Once mixture is cold divide it into small balls no of balls same as the no of flour balls. Flatten a flour ball with rolling pin add the dal paste in it, cover all sides and make a round ball, apply ghee on surface and with careful hand using rolling pin flatten it to make a paratha. Add ghee in tawa fry each sides of the paratha , fold it . Serve it .

In pan add butter, roast the sliced garlic, add milk, add flour and cornflower,  stir continuously, mix everything well, turn off the flame, add pepper, red chilli flakes, mixed herbs. Refined oil 2 tablespoon 9. Green chillies chopped 10 breadcrumbs Process Heat a pan, add Mustard oil, add onion slices fry it, add mashed potatoes, add red chilli powder, garam masala powder. Salt, mix everything well, turn off heat, allow mixture to be cooled. Add peanuts to it. Break 2 eggs in a bowl, add salt, green chillies, onion to it Make an omlette . Divide the omlette  in 4 equal parts. Take a portion of the potatoe mixture add on either sides of the omlette, flatten with both hands, dip in egg coat with breadcrumbs and fry in refined oil. Wooden sheekh 11 grated cheese ( optional) Process Marinate chicken in venegar for 30 mins Soak chana dal in water overnight, remove excess water. In a mixer jar chicken, chana dal,salt,red chilli powder, corriander powder, garam masala powder make a thick paste. Heat oil in pan, add ginger garlic paste,  followed by chicken paste , grated cheese and mix everything well, saute it for 5 mins, let the mixture come to room temperature, take a part of mixture roll it with both hands, take a part of mixture roll it with both hands , insert sheekh within it, brush some oil on either side. Preheat oven for 5 mins, grill the sheekh kababs for 5 mins each side, serve it with mayonese

 Kalakand Ingredients 1. Full cream milk 1 litre 2. Sugar 1 cup 3. Lemon juice / vinegar 1/2 teaspoon 4. 1 tiny pinch of alum 5. Ghee 1 tablespoon 6. Cardamom powder.. 7. Tracing paper / parchment paper 8. Foil box Process In a flat bottom pan heat the milk at medium to low flame, continue stirring the milk till it reduces to 1/4 rth, add vinegar/ lemon juice, stir it , add alum, continue stirring for some time, add half cup sugar slowly and mix it. Notice the moisture content increases with adding sugar, again stir it till moisture content reduces more. Then add remaining sugar, add ghee. Stir it till entire moisture content  disappears add cardamom powder mix it nicely, turn off flame Take a foil box, add tracing paper/parchment paper, grease it with oil or ghee, add the curd ( demoisturised milk) to it , flatten with hand Refrigerate it overnight. Take out from refrigerater , cut into squares and serve it

 Hash browns Ingredients 1. 3 medium sized potatoes peeled off and grated 2. Refined oil 4 tablespoon 4. Butter 1 teaspoon 5. Garlic paste 6. Red chilli powder 1/2 teaspoon 7. Corriander powder 1 teaspoon 8. Cornflower 2 tablespoon 9. Rice flour 2 tablespoon 10. Cheese cube 1 grated 11. Salt 12. Pepper 1/2 teaspoon 13. Mixed herbs Process Soak the grated potatoes in water for 5-10 mins, wash off execess water. In a pan add some water , add grated pities in it such that level of water is more than potatoes. Boil water for 5 mins till the potatoes become bit softer ( do not boil them completely). Mixed herbs 1 teaspoon Process Marinate chicken in vinegar for 30 mins Remove excess vinegar In a bowl add milk, marinate chicken for 1 hour Take out chicken from milk in a separate bowl , add garlic paste, 1 teaspoon, barbecue sauce, corriander powder,salt, cornflower, flour, mixed herbs, chilli flakes and marinate chicken wings for 1 hour Heat oil in pan, fry chicken wings ( without excess marinated gravy) to golden brown Add remaining ginger paste in pan, add the milk which was used in marination, add marinated masala , add water 1 teaspoon if required, add salt and make a thick gravy, add fried chicken wings and saute both sides for 5 mins.
