Ingredients
1. Full cream milk 1 litre
2. Sugar 1 cup
3. Lemon juice / vinegar 1/2 teaspoon
4. 1 tiny pinch of alum
5. Ghee 1 tablespoon
6. Cardamom powder..
7. Tracing paper / parchment paper
8. Foil box
Process
In a flat bottom pan heat the milk at medium to low flame, continue stirring the milk till it reduces to 1/4 rth, add vinegar/ lemon juice, stir it , add alum, continue stirring for some time, add half cup sugar slowly and mix it. Notice the moisture content increases with adding sugar, again stir it till moisture content reduces more.
Then add remaining sugar, add ghee. Stir it till entire moisture content disappears add cardamom powder mix it nicely, turn off flame
Take a foil box, add tracing paper/parchment paper, grease it with oil or ghee, add the curd ( demoisturised milk) to it , flatten with hand
Refrigerate it overnight.
Take out from refrigerater , cut into squares and serve it
