Baked alu patty

 Baked alu patty Ingredients 1. Potatoes 2 medium sized 2. Onion sliced 1 small 3. Ginger garlic paste 1 teaspoon 4. Red chilli powder 1/2 teaspoon 5. Corriander powder 1/2 teaspoon 6. Garam masala powder 1/2 teaspoon 7. Patti's sheet 8. Refined oil 1 teaspoon 9.salt 10. Cornflower 1 teaspoon 11. Breadcrumbs 1 teaspoon Process Grate the potatoes. In pan add oil, add sliced onion Add  ginger garlic paste, red chilli, corriander powder, garam masala powder, cornflower, breadcrumbs, salt,mix everything well, till the moisture disappears. Cool the mixture, take a small portion from the mixture and roll it with your hands. Take a Patti's sheet, add the mixture at one end, roll it, tie the ends with water. Brush it with oil. Heat oven and bake it at 150 degree for 10 mins  both sides

 Chicken bruschetta Ingredients 1. Boneless chicken 4 cubes 2. Vinegar 1 teaspoon 3. 2 white breads 4. Butter 1 cube 5. Cheese cubes 1/2 6. Mayonese 2 tablespoon 7. Oil 1 teaspoon 8. Milk 1/2 cup 9. Salt 10. Pepper 1 teaspoon 11. Mixed herbs 12. Ginger garlic paste 1 teaspoon Process Marinate chicken cubes in vinegar for 30 mins Remove excess vinegar, add melted butter, mayonese1 tablespoon, giner garlic paste , 2 tablespoon of milk , pepper, mixed herbs and marinate it for  3-4 hours. Bring it to room temperature, add oil in pan, add chicken pieces saute them, add milk, followed by lukewarm water allow chicken to boil, crush the chicken, add mayonese after water is dried, add mixed herbes, let the mixture cool Remove the sides of bread , cut them into 2 pieces each ( vertically), hard toast the bread pnbtwo sides, add chicken mixture on top,add cheese cubes ( cut into further small cubes), put the entire thing in microwave and allow cheese to melt. Serve it hot

 Mini creamy chicken Patti's Ingredients 1. Boneless chicken 3/4 pieces 2. Ginger garlic tomato paste 1 teaspoon 3. Cheese 1 cube grated 4 . Mayonese 2 teaspoon 10 . Refined Oil 2 tablespoon 11. Onion 1 chopped 12. Parties sheet 4 13. Vinegar 1 teaspoon 14. Pepper 1 teaspoon 15. Mixed herbs 1 teaspoon 16. Green chillies 3 17. Salt Process Marinate chicken in venegar for 30 mins Heat a pan, add 1 tablespoon of oil , fry the onion till they are golden brown, add green chillies, follows by ginger garlic paste, add chicken pieces, add salt, pepper, origano add lukewarm water allow the chicken to boil, once the chicken is boiled, increase the flame add mayoneses , crush the chicken, add grated cheese , mix everything well , let the water dry out completelyand turn off the flame. Let the mixture cool down.  Veggie chicken utthapam  Ingredients 1. Rice 1/2 cup 2. Urad dal 1/2 cup 3. Fenugreek seeds 1 teaspoon 4. Ajwain 1 teaspoon 5. Salt 6. Available green vegetables ( beans, tomato, carrot, babycorn, chilli, onion) 7. Ginger garlic paste 1 tablespoon 8. Refined oil 2 tablespoon 9. Poha 1/4 cup 10. Red chilli powder 1/4 teaspoon 11. Turmeric powder 1/2 teaspoon 12. Pepper 1/2 teaspoon 13. Garam masala powder 1/2 teaspoon 14. Corriander powder 1/2 teaspoon Process Soak rice and dal for 2 hours,soak poha for 30 mins. Add Fenugreek seeds and ajwain in rice and dal.  Make a paste or rice and urad dal. Make a paste of poha, mix everything, add salt and garment overnight. Boil chicken in salt and pepper.  In a pan take 1 tablespoon of oil, fry onions, saute the vegetables and chicken, add chicken stock, ginger garlic paste, red chilli powder, turmeric powder, garam masala powder, corriander powder and make a dry gravy.  Veg chilla Ingredients 1. Moong dal 1 cup soaked in water for 5 hours 2. Grated paneer 2 tablespoon 3.  vegetables onion, capcicum,beans, babycorn, green chillies, tomato chopped 4. Ginger paste 1 teaspoon 5. Refined oil 1 teaspoon 6. Salt 7. Red chilli powder 1/2 teaspoon 8. Turmeric powder 1 teaspoon 9.garam masala 1 teaspoon Process Add 3 tablespoon of water, salt in the soaked dal make a thick paste. Add water if the concentration increases In a pan, add oil add ginger paste, then add vegetables , saute tham, add salt, turmeric, red chilli, garam masala powder. Turn off heat add grated paneer. Heat a tawa, add a spoonful of batter and cover the pan, when one side is cooked flip it add vegetables at the centre and fold the sides, once both sides are cooked, serve it Add handful of water on tawa, soak excess water with a cotton cloth, and repeat the process.

 Fish tikka Ingredients 1. Bhetki fillets cut into square pieces -8/9 2. Vinegar 2 tablespoons 3. Ginger garlic green chilli paste 2 tablespoon 3. Hunk curd 2 tablespoon 4. Olive oil 1 tablespoon 5. Melted Butter 1 teaspoon 6. Corriander powder 1 teaspoon 7. Garam masala powder 1 teaspoon 8. Turmeric powder 1 teaspoon 9. Red chilli powder 1/2 teaspoon 10. Salt 11. Onion 1 12. Capcicum 1( optional , I didn't have capcicum so could not use it) 13. Wooden sticks 4 14. Roasted gram flour 2 tablespoon 15. Cornflower 1 tablespoon Process Marinate fish in vinegar for 30 mins In a bowl add curd, add corriander powder, turmeric powder, red chilli powder, garam masala powder, ginger garlic paste, make a thick batter. Add gram flour and cornflower into it, add 2/3 tablespoon of water in case the batter is too thick. Do not add salt, remove excess vinegar from fish , add fish fillets into the batter, add 1 teaspoon of oil and coat the fish properly. Refrigerate the marinated fish for 3 hours. ...

 Veg kabab Ingredients 1. Gram flour ( besan) 2 tablespoon 2. Semolina 2 tablespoon 3. Beans 4/5 chopped 4. Carrot 1 chopped 5. Onion 1 chopped 6. Ginger garlic paste 1 tablespoon 7. Green chillies chopped 2/3 8. Garam masala powder 1 teaspoon 9. Red chilli powder 1/2 teaspoon 10. Turmeric powder 1/2 teaspoon 11. Salt 12. Mustard seeds 13. Asfoetida 1/2 teaspoon 14. Refined oil 3 tablespoon 15. Curry leaves ( those who prefer to have, since I don't like it, I haven't used) 16, corriander powder 1/2 teaspoon Process In a bowl add gram flour, semolina, salt, turmeric powder and make a thick batter In a pan add 1/2 teaspoon of oil, add Mustard seeds and asfoetida, curry leaves ( optional) add the batter , saute it thoroughly till water disappears. Take it in a bowl and let it cool. In pan add 1/2 tablespoon of oil, saute the vegetables along with ginger garlic paste for 5 mins.  Egg chicken moglai Ingredients 1. Egg 1 2. Boneless chicken 4 medium sized 3. Sliced onion 2  4. Ginger garlic green chilli tomato paste 3 tablespoon 5. Corriander powder 1 teaspoon 6. Garam masala powder 1 teaspoon 7. Salt 8. Flour 1.5 cup 9. Refined oil 3 tablespoon 10. Dalda 2 tablespoon 11. Lukewarm water 12. Sugar 1 teaspoon 13. Red chilli powder 1/2 teaspoon 14. Sliced green chillies 3 Process Add flour in a bowl, mix with dalda thoroughly, if required add little oil, add salt, sugar, add little lukewarm water slowly and gradually and mix everything well. Knead the dough , do not make it too hard or too soft. Cover it with warm hydrated towel and rest it for 5-6 hours. Kalakand

 Kalakand Ingredients 1. Full cream milk 1 litre 2. Sugar 1 cup 3. Lemon juice / vinegar 1/2 teaspoon 4. 1 tiny pinch of alum 5. Ghee 1 tablespoon 6. Cardamom powder.. 7. Tracing paper / parchment paper 8. Foil box Process In a flat bottom pan heat the milk at medium to low flame, continue stirring the milk till it reduces to 1/4 rth, add vinegar/ lemon juice, stir it , add alum, continue stirring for some time, add half cup sugar slowly and mix it. Notice the moisture content increases with adding sugar, again stir it till moisture content reduces more. Then add remaining sugar, add ghee. Stir it till entire moisture content  disappears add cardamom powder mix it nicely, turn off flame Take a foil box, add tracing paper/parchment paper, grease it with oil or ghee, add the curd ( demoisturised milk) to it , flatten with hand Refrigerate it overnight. Take out from refrigerater , cut into squares and serve it

 Hash browns Ingredients 1. 3 medium sized potatoes peeled off and grated 2. Refined oil 4 tablespoon 4. Butter 1 teaspoon 5. Garlic paste 6. Red chilli powder 1/2 teaspoon 7. Corriander powder 1 teaspoon 8. Cornflower 2 tablespoon 9. Rice flour 2 tablespoon 10. Cheese cube 1 grated 11. Salt 12. Pepper 1/2 teaspoon 13. Mixed herbs Process Soak the grated potatoes in water for 5-10 mins, wash off execess water. In a pan add some water , add grated pities in it such that level of water is more than potatoes. Boil water for 5 mins till the potatoes become bit softer ( do not boil them completely). Drain off excess water, wash with cold water to bring in room temperature.spread it on a cloth and allow the cloth to soak excess water Add butter in pan and fry grated potatoes for 5 mins in medium to low flame till the water evaporates.  Bring it to room temperature, add garlic paste, red chilli powder, salt, corriander powder, mixed herbs, cheese, pepper, cornflower, rice flour,...

 Chicken wings in white sauce Ingredients 1. Chicken wings 6 pieces 2. Milk 1/2 cup 3. Garlic paste 2 teaspoon 4. Barbecue sauce 1 teaspoon 5. Corriander powder 1 teaspoon 6. Salt 7. Flour 2 tablespoon 8. Cornflower 1 tablespoon 9. Olive oil 2 tablespoon 10. Vinegar 1 tablespoon 11. Chilli flakes 12. Mixed herbs 1 teaspoon Process Marinate chicken in vinegar for 30 mins Remove excess vinegar In a bowl add milk, marinate chicken for 1 hour Take out chicken from milk in a separate bowl , add garlic paste, 1 teaspoon, barbecue sauce, corriander powder,salt, cornflower, flour, mixed herbs, chilli flakes and marinate chicken wings for 1 hour Heat oil in pan, fry chicken wings ( without excess marinated gravy) to golden brown Add remaining ginger paste in pan, add the milk which was used in marination, add marinated masala , add water 1 teaspoon if required, add salt and make a thick gravy, add fried chicken wings and saute both sides for 5 mins. Serve hot.
