Almond Kalakand

Kalakand is a famous bengali sweet dish.Kalakand preparation is quite easy and it requires Minimum Ingridients. Kalakand is normally garnished with Pesta. But in current pandemic situation Pesta was not available at home, moreover I didnt have my favourite dessert since a log time. So tried in a bit different way using Almond pieces Ingredients 1. 500l of full cream milk 2. 1 teaspoon of grinded alum 3. Dusted sugar 2 tablespoon 4. Mawa 1 teaspoon 5. Powder milk 2 tablespoon 6. Ghee 1 teaspoon 7. 7/8 almonds cut into small pieces Process  Heat the milk in a container at low flame. Add Powder Milk, sugar to the milk Once the milk is reduced to 50%, add powdered alum. Further reduce milk so that no moisture is left. Brush ghee to a container. Add milk and garnish it with pieces of almonds. Bring it to room temperature and then keep it in refrigerator for about 2 hours.

Curd

Preparing curd at home is very easy. I prefer to prepare curd different from the traditional way with minimum ingredients Ingredients 1. 3/4 cup of lukewarm milk 2. 2 tbsp of powdered milk 3. 1 red chilli Process Add 2 tbsp of powdered milk to the lukewarm milk Add one red chilli on the top of milk Cover it and keep it on rest for 14-15 hours After 15 hours take off the red chilli Put the curd in refrigerator

Eggless almond cookies

Ingredients 1. 1 cup of  flour 2. 1 cup of milk 3. 1/2 cup oil 4. 3/4 cup sugar 5. Baking powder 1 teaspoon 6. Baking soda 1/2 teaspoon 7. Foil container 2 8. Butter 1 cube 9. Dark chocolate 2 cubes 10.Chocolate chips 25 gm 11.Almonds soaked in water Process Add  sugar oil and milk in a mixing bowl Blend them with hand blender Add baking powder baking soda to the flour Melt chocolate with butter in microwave ( 1 minute) Add chocolate to the mixture of milk oil and sugar Again blend them Add small pieces of chocolate chips to the mixture Add mixture of flour and baking powder to the mixing bowl Mix them properly Take a foil container Make small balls of mixture and add them on the foil neatly Add almond pieces on top of the balls Preheat oven at 150degree for 5 minutes Bake the cookies for 10 minutes at 150 degrees Bring them to normal temperature and store them in container

Raser golla.... Rasagolla

I am bengali...so I love sweets and rasagolla is my favourite.... I got the recepie from one of my friend and made some changes Let's check out the recepie Ingredients 1. 500l milk 2. 2 lemon 3. Sugar 4. Flour Process Boil the milk Turn off the gas Add lemon juice and stir it continuously Take the coagulated product and bind it in a clean cloth and keep it for 30 mins Add sugar to a pan, add water 5 times to the sugar and boil it After 30 mins take the coagulated product and wash it in running water Mix 1 table spoon of flour and knit it well Make small balls and por them to boiling sugar water Keep the flame high for 30 mins andthen lower the flame for another 20 mins  pour them into a container and store it

Mutton Biriyani

Ingredients 1. 2 large pieces of mutton 2. Curd 200gm 3. 4 tbsp of ginger garlic paste 4. 2 large onions finely chopped 5. 2 glass of basmati rice 6. 1 large potato cut in two pieces 7. Turmeric powder 2 tablespoon 8. Red chilli powder 2 teaspoon 9. Rose water 1 teaspoon 10 keora water 1 teaspoon 11. Milk 12. Saffron 13. Garam masala whole 14. Biriyani masala 15. 6 tablespoons of white oil 16. 6 teaspoons of ghee 17. Salt as per taste Process Wash the rice and soak in water for 1 hour Marinate potatoes for 1 hour with turmeric powder, salt,red chilli powder Marinate mutton for 1 hour with curd, ginger garlic paste turmeric powder and red chilli powder Roast garam masala whole and biriyani masala whole in a tawa Bring it to room temperature Prepare a dust Add 2 tablespoon of oil and deep fry the onion slices In a bowl add milk, rose water, keora water, saffron and keep it on rest for 30 minutes In a pan add 1 tablespoon of oil and 1 teaspoon of ghee fry the ...

Dahi vada

Ingredients 1. 50 gm of urad daal 2. 200gms of curd 3. Corriander leaves 4. 3 cloves of garlic 5. 2 green chillies 6. cumin seeds 7. Salt to taste 8. Sugar to taste 9. Ajwain 10.Refined oil 11. Turmeric ( 4 ripe termerinds) 12. Bhujias 13. Black salt Process Soak urad dal overnight Drain off excess water Make a paste in mixer Add salt as per taste Blend the mixture for 15 minutes in one direction using a blender, do not add any water to the mixturel Heat oil in a pan Make small vadas of the mixture Fry them till they are golden brown Soak them in a tissue paper bring them to room temperature Add the fried vadas to luke warm water, cover it and add a heavy object on top of it for 10 mins. Chingri latpati

Ingredients 1. Bagda chingri ( prawn) 200gm 2. Onion 1 ( small) - slices 3. Onion 1 ( medium) - paste 4. Ginger garlic paste  2 table spoons 5.  Potato -1 slices 6. Tomato 1 medium 7. Garam masala powder 1 teaspoon 8. Turmeric powder 2 teaspoon 9. Red chilli powder 1 teaspoon 10. Salt 11. Mustard oil 3 table spoon Procedure Clean the prawns Marinate prawns and potatoes with salt and turmeric powder Fry the potatoes and prawns ( light fry) Fry the onion slices to light brown Add onion paste, ginger garlic paste, tomato paste, turmeric powder, chilli powder salt Mix them properly Add water, potatoes, prawns and cover the pan Cook for 5-10 mins Garnish with garam masala powder Serve it hot

Chicken kochuri

Ingredients 1. 2 pieces of boneless chicken 2. 1 cup of flour 3. Refined oil 3 table spoon 4. Pepper 3 table spoon 5. Salt as per taste 6. 4/5 cloves of garlic 7. Ketchup 8. Onion slices Process Make a dough of flour Add boneless chicken, garlic, pepper, salt in a blender and blend them properly In a pan add 1 tablespoon of oil, chicken mixture and saute it properly Add chicken mixture and make small parathas with the mixture inside Heat the oil in a non-stick fry pan and fry the kochuris Serve with kechup and onion slices

Sugar free pudding

Pudding is a sweet dish....but for the diabetic patients it can be sugar free Ingredients 1. 200 ml of milk 2. 1 egg 3. 1 slice of brown bread Procedure Boil the milk till it becomes half the original quantity Prepare breadcrumbs for 1 slice of bread Blend an egg and add the breadcrumbs to the blended egg Mix the milk with egg and breadcrumb mixture Add the mixture in a closed container Add 1/4 water in a pressure cooker Keep the closed container inside pressure cooker and cook for 30-40 mins Bring the container to room temperature Keep the container in a refrigerator

Egg Rice

Ingredients 1. Eggs :2 2. Ginger Garlic paste 1 table spoon 3. Mustard oil 1 table spoon 4. Refined oil 1 table spoon 5. Garam Masala whole 6. Red chilli powder1 teaspooon 7. Turmeric powder 2 tea spoon 8. Potato :1 9. Salt - as per taste 10. Rice - 1.5 glass 11. Tomato paste :1 12: Onion paste : 1 13. pepper :1 teaspoon Process Boil eggs Fry eggs and potato (marinated with salt and turmeric powder) cook the rice upto 80% In a pan add mustard oil Then add onion paste, ginger garlic paste tomato paste Mix them well , add Turmeric powder , red chilli powder, salt Add water and cook them well and then add potato and eggs. Cover the pan and cook for 5 minutes In a separate pan add refined oil , garam masala whole Then add rice and fry it for some time, add cooked eggm salt , peeper and mix them well Cook for 5 minutes and serve hot. Pancake with honey

Evening snacks with pancake and honey Ingredients 1. Flour 2 table spoon 2. Sugar 1 table spoon 3. Egg 1 4. Milk 1/2 cup 5. Rawa 1 teaspoon 6. Baking powder 1 teaspoon 7. Salt 8. 2 tablespoon of refined oil 9. Honey 2 tablespoon Process In a mixing bowl add flour sugar baking powder rawa and salt Add milk egg Blend all the ingredients, add 1 tablespoon of honey and 1 tablespoon of oil Heat the pan, add oil Add blended mixture Cook it for 5 minutes Serve it with honey

Dalgona coffee in my style

Ingredients 1. Coffee 3 teaspoons 2. Sugar 3 teaspoons 3. Warm water 3 table spoon 4. Milk 5. Ice 4. Chocolate chips Process Add coffee sugar warm water Blend them well Add milk in 2 glasses Add sugar ( optional) Add ice Add mixture of coffee sugar water on top of milk Add chocolate chips to decorate

Walnut chocolate cookies

Ingredients 1. 1 cup of  flour 2. 1 egg 3. 1/2 cup oil 4. 3/4 cup sugar 5. Baking powder 1 teaspoon 6. Cooking soda 1/2 teaspoon 7. Foil container 2 8. Tracing paper 1 9. Butter 1 cube 10. Dark chocolate 2 cubes 11. Chocolate chips 25 gm 12. Walnuts Process Add  sugar oil and egg in a mixing bowl Blend them with hand blender Add baking powder cooking soda to the flour Melt chocolate with butter in microwave ( 1 minuite) Add chocolate to the mixture of egg oil and sugar Again blend them Add small pieces of walnuts and chocolate chips to the mixture Add mixture of flour and baking powder to the mixing bowl Mix them properly Take a foil container Cut tracing paper in size of the container Brush oil on tracing paper Make small balls of mixture and add them on tracing paper neatly Preheat oven at 150degree for 5 minutes Bake the cookies for 10 minutes at 150 degrees Bring them to normal temperature and store them in container

Fish Polao

Ingredients 1. 2 pieces of rohu fish 2. Basmati rice 50 gm 3. Garam masala powder 1 teaspoon. 4.  Pepper 1 teaspoon 5.  Refined oil 2 tbsp 6. Ghee 2 tbsp 7. Rose water 1 teaspoon 8. Saffron soaked in milk 9. Turmeric powder 1 teaspoon 10. Salt 11. Sugar 12. Garam masala whole Procedure Soak rice for half an hour Drain excess water Add ghee ( 1 tbsp), turmeric powder pepper and garam masala powder Add refined oil in pan Fry fish in refined oil Add 1 tbsp of garam masala whole Add soaked rice Add boiled water ( ratio of water to rice is 2:1) Add rose water, saffron ( soaked in milk) Salt , sugar to taste ( remember the water will dry up hence consider amount of salt) Cover the pan and let the rice cook for 5 minutes Serve it hot
