Dahi vada

Ingredients
1. 50 gm of urad daal
2. 200gms of curd
3. Corriander leaves
4. 3 cloves of garlic
5. 2 green chillies
6. cumin seeds
7. Salt to taste
8. Sugar to taste
9. Ajwain
10.Refined oil
11. Turmeric ( 4 ripe termerinds)
12. Bhujias
13. Black salt

Process
Soak urad dal overnight
Drain off excess water
Make a paste in mixer
Add salt as per taste
Blend the mixture for 15 minutes in one direction using a blender, do not add any water to the mixturel
Heat oil in a pan
Make small vadas of the mixture
Fry them till they are golden brown
Soak them in a tissue paper bring them to room temperature
Add the fried vadas to luke warm water, cover it and add a heavy object on top of it for 10 mins.
Repeat this for 3 times till they soak enough water
Add sugar to curd and stir it well
Add cumin seeds and ajwain to a pan and fry it for 30 secs
Bring it to normal temperature
Make a powder of it
Make a coriander chutney with finely chopped coriander leaves, salt, green chillies, garlic.
Add water to termerind, mix them well, remove the seeds, add little sugar and make a good termerind chutney
In a bowl add the vadas
Add curd on top of it
Add black salt
Add turmerind chutney and corriander chutney.
Garnish with bhujias
