Prawn Polao
Ingredients
1. 250 gm prawn marinated with salt and turmeric powder
2. Basmati rice 50 gm
3. Onion slice 1
4. Spring onions 3
5. Green chillies 3
6. Corriander leaves
7. Ginger garlic paste
8. Tomato paste
9. Garam masala powder
10. Pepper
11. Mustard oil 1 tbsp
12. Ghee 1 tea spoon
13. Rose water 1 tbsp
14. Saffron soaked in milk
15. Turmeric powder 1 teaspoon
16. Red chilli powder 1/4 tea spoon
Procedure
Soak rice for half an hour
Drain excess water
Add ghee and garam masala powder
Add Mustard oil
Add onion, spring onions stir them
Add ginger garlic paste,Tomato paste
Add green chillies
Add pepper,Turmeric powder and red chilli powder, salt
Add prawns
Add soaked rice
Add boiled water ( ratio of water to rice is 2:1)
Add rose water, saffron ( soaked in milk)
Salt to taste ( remember the water will dry up hence consider amount of salt)
Cover the pan and let the rice cook for 5 minutes
Add corriander leaves and spring onions to garnish
